1.大龙虾洗净，剔出虾肉，剁成绿豆大小的粒;荸荠洗净去皮剁成细粒;姜、葱捣成汁;西兰花入沸水锅中焯断出捞出，用川盐、味精、麻油拌上味;蒜薹焯断生拌味后编成辫形花待用。2.大龙虾肉粒、荸荠粒入盆，加姜、葱汁、川盐、味精、鸡蛋清、湿淀粉、胡椒粉搅匀呈干糊状备用。3.取大盘一个，先撒上一层面粉，再将虾茸挤成24个圆子，放在面包粉上，滚粘上一层面包粉，待用。4.锅置火上，放精炼油烧至七成热时，将大龙虾壳整理成形，入锅炸至定型成熟后，捞入盘中摆好，再将虾茸圆子入锅炸至呈金黄色且熟时，捞出入虾壳中间，两边镶上西兰花，另将蒜薹花、椒盐味料入小盘中，同时上桌即成。
