一、/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ
1．沾化冬枣 又名鲁北冬枣、苹果枣，是目前品质最佳的稀有晚熟鲜食品种，/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ也是当前生产推广发展的主要冬枣品种。现主要分布在山东境内黄河以北的无棣、沾化、惠民等地，河北的黄骅、盐山等地也有分布。/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ该品种果实中等偏大，果形近似苹果，平均果重14克--16克，最大果重23.2克。果皮薄而脆，成熟后呈赭红色。果肉细嫩多汁，略具草辛味，生食无渣。/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ可溶性固形物含量39%--42%，含水量70%左右，可食率96.9%，品质极佳。
2．成武冬枣 外观呈长椭圆形，果实较大。平均果重25.8克，最大果重32克，大小整齐。果面不平，果皮较厚，外观呈深赭红色。果肉细脆，较硬，/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ，少汁，甜味浓，可溶性固形物含量35%--37%，可食率97.8%，鲜食品质上等。
3．薛城冬枣 薛城冬枣是国内特晚熟鲜食品种。果实呈圆形略扁，端正，整齐度高。平均果重22克左右，大果可在40克以上。/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ可溶性固形物含量27%，可食率97.3%。果肉松脆，口感稍粗，果汁含量中等偏多。/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ但该品种有两大不足：一是果实品质差，市场前景不好；二是部分果实有&核外核&现象，故不宜大面积推广发展。
二、冬枣保鲜流程图
采收包装运输
采前准备--&采收、初分--&冷库预冷，分级贮藏包装　 销售包装 --&入库--&贮藏管理--&清理--&出库--&销售运输
三、采前准备
主要针对有流动资金和冷藏或气调设施的专业户，在枣收获前半个月要对制冷设备、电器装置进行养护和检修。/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ首先对库房进行清扫和消毒，之后对库房进行预冷，准备充足的采收包装用品，并对果园进行考察，确定收购地点和采收量。
序房工具或容器消毒可用0．25%次氯酸钙溶液浸泡或刷白，/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ有条件的还可以在阳光下曝晒；库房可用15克/立方米--20克/立方米硫磺熏蒸24小时--48小时，或用1%--2%福尔马林、84消毒液、0.5%漂白粉等消毒剂喷洒墙面、地面。入库前1周降温至-1℃，并使其保持稳定。
四、采收和初分
1．品种 选择适宜贮存的鲜食冬枣品种十分关键。据统计，我国有鲜枣品种749个，冬枣鲜食品种56个，晚熟品种27个。/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ大量发展的冬枣品种除沾化冬枣外，还包括薛城冬枣、蒙阴雪枣、长乐冬枣等几个品种，因产地和品种特性的差异，/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ其贮藏寿命也存在差异，口感和品质也不同，市场价格差异较大，在采收时要注意区别，并根据具体情况掌握。/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ一般晚熟品种较早熟品种耐贮，抗裂果品种、小果形品种或大果形中果肉较疏松的品种耐贮。
2．适时采收 枣的成熟度按皮色、肉质变化情况可划分为白熟期、脆熟期和完熟期三个阶段。白熟期的果实果皮叶绿素大量减少，果肉呈绿白色或乳白色，果实重量不再增长，冬枣在这一时期已有良好的食用品质，/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ可溶性固形物高达25%，并含有丰富的维生素C。
脆熟期的果实果皮由梗洼、果肩开始逐渐着色转红，此时期果实鲜艳，果肉呈绿白色或乳白色，果胶物质已由原果胶分解为果胶，/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ使果肉质地变脆，汁液增多，此时食用品质极佳。脆熟期的果实又可分为初红果(25%着色)、半红果(50%着色)和全红果(100%着色)三种类型。
完熟期的果实含糖量达到最高值，芳香物质大量合成，果皮渐变为紫红色，果柄和果实连接的?端开始转黄，果肉由原来的绿白色转变为乳白色，/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ近核处成为黄褐色，质地从近核处开始逐渐向外变软，/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ有些果实还有酒味，此时枣果已失去商品价值。
冬枣成熟期在10月5日--10月15日前后，因此在采收时最好分期分批进行，保证入贮果实有均匀的成熟度，/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ并在枣果脆熟期以前完成为宜。为降低采后田间热，采摘工作宜在早晨或傍晚气温低时进行。
3．采收方法 采摘是影响贮藏效果的关键工序。由于冬枣皮薄肉脆，/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ极易在摘果和搬运中形成内伤果，贮藏前难以分辨，贮藏中常易引发枣腐烂。因此，采收时严禁用竹竿敲打、摇树。/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ，采前也不宜喷乙烯利。采收方式最好是人工逐个带果柄采摘，原因是果柄受伤也会增强枣的呼吸强度，愈伤效果不好者也易造成腐烂。采收后应轻拿轻放，放入有软衬垫的容器内。
4．初分和包装 采收的冬枣要经过初分，挑出病虫果、刺(压)伤果、无果柄果、过熟果。/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ作为长期保鲜用果要按果实成熟度分级，短期周转用果可按大小分级。采摘包装可采用小果篮，运输包装要用塑料周转箱，纸箱等耐压的包装材料，/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ为防失水可用塑料袋、塑料纸进行简易包装。
五、预冷分级入库
预冷是果蔬贮藏的必要环节。采摘的冬枣最好在24小时内降温至0℃左右，/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ这样可以降低枣果温度，释放果实田间热，抑制枣果呼吸强度和酶的活性，防止微生物生长，起到阻止果实衰老，延长贮藏期的作用。
预冷可以采用在冷库中划出一个预冷间(-1℃)或直接进入小型冷库的方法进行。小冷库每次入库量控制在总库容量的20%，/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ使库内温度幅动不致过大，箱与箱之间摆放要有空隙，保证空气流动，使果实降温均匀彻底。/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ当枣温达到0℃时，可以用0．04毫米--0．06毫米厚的聚氯乙烯袋包装，每袋1千克，袋上扎直径5毫米的小孔8个，扎好口后冷藏。
采用气调库贮存的枣果，必须有一间专用预冷库，待枣果品温达到要求时，/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ再放入调库内。同时要严格检验入库枣果，有腐烂和外伤者严禁带入因为气调库检查不便，V一旦有腐烂果会影响整个库内果实的贮存效果。&
六、贮藏期管理
1．温度 稳定低温是枣果贮存的关键条件。冷库温度应在0℃--2℃之间，安全温度应控制在&1℃，库温上下波动不宜超过2℃，枣果品温波动不大于0.5℃最为理想。/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ由于品温波动易造成包装袋内结露，增加霉菌滋生、枣果腐烂的机率，此外，温度波动也会对枣果的生理产生一系列负面影响。因此，/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ在贮存过程中要保证库内温度均匀并且温度设置稳定。
总之，在贮存技术中，要依据枣的生长成熟情况分级、分期采收，并在24小时内完成预冷工作。/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ分级和运输中要尽量减少碰撞，贮存过程中要求库温度在&1℃范围内波动，湿度在90%--95%之间。气体组成控制在氧气：3%--5%，二氧化碳：小于2%。/_ＷＷＷＷ．ＢＩＬＩＢＩＬＩ　ＴＶ要及时排除制冷气流中由于电力不足或停电造成的库温升高的情况。&
